Quesito’s Recipe:
• 1 puff pastry sheet
• 1 egg
• 1 tablespoon water
• 1/2 teaspoon sugar
• 1 block cream cheese
• 1/4 cup sugar
• 1 teaspoon vanilla
• Jam (red raspberry, guava paste, Nutella, mixed berry or lemon curd)
• Light Karo syrup
• Powdered sugar, for dusting

Preheat oven to 350 degrees.
• Take your puff pastry out of the freezer for 10 minutes to thaw.
• Beat 1 egg with 1 tablespoon water and 1/2 teaspoon sugar.
• Beat 1 block of cream cheese with 1/4 cup sugar and 1 teaspoon vanilla. Option: use whipped cream cheese for less sugar.
• Cut puff pastry into thirds and then thirds again.  You will have 9 squares.  On a lightly floured surface, or parchment paper, roll out each square to create a larger square. The thinner the pastry the less it will puff up so don’t roll out too thin.  Poke squares with a fork.  Turn the square towards you to form a diamond pattern.
• Brush the edges of the diamond square with egg wash.
• Add a scoop of cream cheese mixture into the center of each square. Then add a scoop of jam on top of the cream cheese.  The amount is totally your preference, but I’d say about 1/2 tablespoon of each is plenty.
• Fold the bottom diamond corner into the center and then fold the opposite corner (the top point) to the center overlapping a little to seal them together.  Repeat with all squares.
• Place the quesitos on a parchment lined baking pan.
• Brush all pastries with the egg wash and sprinkle with additional sugar before baking.
• Bake for 10-15 minutes or until puffed up and golden.
• Remove from oven and drizzle with light Karo syrup and sprinkle with powdered sugar. Serve!

Nothing better than a fresh, warm slice of apple pie.  During the holidays I like to add fresh cranberries tossed with the apples and it’s so divine!  Did you know a traditional apple pie has a crust on top?  If it’s called a Dutch or Crumble apple pie it has a buttery sugar mixture on top.  What do you prefer?  Traditional or a crumble?
